Seasonings/Rubs

Maybe it's not in my best interest to share my rubs with the world, but people have asked and it does leave them in a space that makes it easier for me to access.  Plus, you may have the rubs, but smoking is an art, and you also need that skillset.  

Pork Rub

2 lb Sugar

1/4 cup molasses

1 part garlic

1 part sea salt

1/2 part onion

1/2 part paprika

1/2 part cumin

1/4 part black pepper

1/20 part cheyenne

Westhampton Brewing Glaze

1 Case Jetty 4 Lager

5-7 bay leaves

2 dried chile pulla

1 dried mulato

3 large garlic cloves

medium onion

12 leaves sage

Beef Rub

1 part salt

1 part pepper

1/2 part garlic

1/2 part onion
